Is it possible to get the rest end point as one input and feed it to the option list in the same catalog to be used for doing GET call and fetching some data?

Unfortunately, you can not variablize the option lists Source URL at this time.

As long as it is not the base url and only query params, you can utilize the request script to update as seen here:
